Absolute Vodka Cured Salmon with Citrus Juices
Yield: 4 servings
16 thin slices raw salmon
2 shallots, finely chopped
1 leek, finely chopped
2 Tbsp Absolute Vodka
juice of 1 ripe blood orange
1 tsp sea salt
Freshly milled black pepper
Few sprigs mizuno leaves or juice of 1 lime to finish
Lay out the thin slices of salmon on plates, 4 per plate.
Sprinkle each plate evenly with the shallot and leek.
Mix the vodka and orange juice, divide into 4 equal
portions and trickle 1 portion on to each plate to cover
the salmon. Just before serving, sprinkle lightly with sea
salt, freshly ground black pepper and lime juice. Garnish
with mizuno leaves or lime juice and serve immediately.
