Amish Sugar Cookies
Amish Oatmeal Cookies
Amish Puff Cookies
Amish Chocolate Chip Cookies



Amish Sugar Cookies

1 cup cooking oil
1 cup margarine
1 cup sugar
1 cup powdered sugar
2 eggs
1 1/2 tsp. vanilla
4 1/2 cup flour
1 tsp. soda
1 tsp. cream of tartar

Mix first 6 ingredients together; beat well. Fold in flour, soda, cream of
tartar. Refrigerate 45 minutes. Roll in balls the size of walnuts, flatten
with fork on ungreased cookie sheet. Bake at 350 degrees for 10 minutes.



Amish Oatmeal Cookies

1 cup raisins
1/3 cup peanuts
2 cup all-purpose flour
2 tsp. baking powder
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1/2 tsp. salt
1/2 cup shortening
1 cup sugar
3/4 to 1 cup raw oatmeal
2 tsp. baking soda
1/3 cup sour milk, add 1 Tbsp. lemon
juice to 1/3 cup milk, let sit
while making cookies
3 Tbsp. dark molasses
1 egg, beaten
1 egg, for topping

Grind raisins and peanuts. Combine flour, baking powder, spices and salt;
cut in shortening. Add sugar, oatmeal, raisins and peanuts; mix well.
Dissolve baking soda in sour milk; add to dry ingredients. Combine and add
molasses and 1 beaten egg. Refrigerate 1 hour. Shape dough into
walnut-size balls on greased cookie sheet. Press down slightly with fork.
Beat 1 egg and paint tops of the cookies. Bake in preheated 375 degree oven
for 15 minutes or until golden brown. Makes about 8 dozen.



Amish Puff Cookies

1 cup shortening, rounded
1 cup brown sugar
1/2 cup granulated sugar
2 eggs
2 3/4 cup flour
1 tsp. cream of tartar
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt

Mix shortening, sugar and eggs thoroughly. Mix dry ingredients and add to
sugar mixture. Chill. Form into balls and roll into mixture of 2
tablespoons sugar and 2 teaspoons cinnamon or add chocolate chips. Press
balls with hand. Bake at 375 degrees for 8 - 10 minutes on ungreased cookie
sheet. Cookies will puff, then settle down and look crinkly.



Amish Chocolate Chip Cookies

1/2 cup shortening
1 cup sugar
2 large eggs
1/2 cup milk
2 1/2 cup flour
1 tsp. baking powder
3/4 tsp. baking soda (place in the
milk)
1 (12 oz.) bag chocolate chips or
butterscotch chips

Cream shortening and sugar. Add eggs and milk with soda. Mix together
and add baking powder. Gradually add flour and stir well. Stir in
chocolate chips or butterscotch chips. Place on a greased cookie sheet
about 1 teaspoon of dough. Bake at 400 degrees until the edge is lightly
brown.
