Chicken Divan
4 skinless boneless chicken breasts
2 packages frozen broccoli spears or equivalent of fresh
8-12 oz shredded mozzarella cheese to completely cover dish
8-12 oz shredded cheddar cheese
5 slices of bread
2 cans cream of chicken soup
1 cup mayonnaise
1 tablespoon lemon juice
Combine cream of chicken soup, mayonnaise and lemon juice and set aside.
Cube five slices of day-old bread. Fry cubes in melted butter till
saturated, brown and crisp. Boil chicken until done. Cut into chunks. Cook
broccoli. Spray a 9x11 pan with no-stick spray. Layer in the following order:
broccoli, mozzarella and chicken. Cover with soup mixture. Sprinkle a layer
of cheddar cheese over soup layer, then top with the bread cubes.
Bake 30-40 minutes at 350: F. Can be assembled ahead of time and
refrigerated. Allow additional time to heat through.
