Tomato Salad W/ Basil Mayonnaise Moncadoit
Ingredients:
1/3 cup white wine vinegar
2 eggs
3 tablespoons coarse-grained mustard
2 teaspoons dried basil, crumbled
11/2 teaspoons salt
1 teaspoon freshly ground pepper
2 cups corn oil
5 large tomatoes cut into 1/2 inch thick slices
freshly ground pepper
fresh basil leaves
Directions:
Combine vinegar, eggs, mustard, basil, salt and pepper in processor
and blend until smooth. With machine running, gradually add oil
through feed tube in slow steady stream and blend until thick. Taste
and adjust seasoning. Arrange tomato slices on platter. Spoon
mayonnaise over. Sprinkle generously with pepper. Garnish with basil.
Serve within 2 hours.
