I'm going to triple this for a small family thing tonite. We'll see how it goes, It's my first go at this one. Seems simple enough.
4 fresh tomatoes, chopped
1 cucumber, peeled and chopped
1 green bell pepper, cut into 1/2 " pieces
1/2 cup chopped red onions
1 tablespoon red wine vinegar
1 tablespoon balsamic vinegar
1 tablespoon extra-virgin olive oil
1 teaspoon salt
1 tablespoon chopped fresh oregano
1/4 cup kalamata olives
1/2 cup feta cheese, crumbled
1. Mix together vinegars, oil, salt and oregano.
2. Add other ingredients.
3. Marinate several hours in refrigerator to allow flavors to blend.
4. Serve.
