Apple Cobbler with a Kick

3 large Granny Smith apples
1 cup all-purpose flour
1 cup sugar
2 teaspoons baking powder
1/4 teaspoon kosher salt
6 tablespoons (three-fourths of a stick) unsalted butter, melted
3/4 cup skim milk
2 tablespoons frozen apple juice concentrate or 1/4 cup of apple juice
2 tablespoons water
1/2 teaspoon Tabasco Habanero Sauce, more or less to taste

For topping:
1/2 cup sugar
1/2 teaspoon cinnamon

Place oven rack in center position and preheat oven to 350 degrees.

Grease a shallow two and one-half quart baking dish; set aside.

Peel, core and thinly slice apples. You should have about five cups sliced apples. Set
aside.

In large mixing bowl, whisk together the flour, sugar, baking powder and salt. Stir in melted butter and skim milk until thoroughly combined. Pour batter into prepared pan.

Top with sliced apples, spreading them evenly over the batter.

DO NOT STIR!!!!!!!!

Combine apple juice concentrate, water and Tabasco Habanero Sauce. Drizzle over apples.

In small, clean bowl, whisk together the sugar and cinnamon for the topping; sprinkle
evenly over apples.

Place in center of oven and bake about 45 minutes, or until apples are tender.

Let cool about 20-to-30 minutes.

Serve warm with vanilla ice cream.

Serves eight.

Note: A friend sent me this and said it's awesome. I haven't tried it yet, but it is on the list. Sounds good anyway.
