Pat Cosby's (Famous) Chicken Salad
One 4 1/2 pound chicken (or equal), soaked for two hours in salt
water.
In fresh water, cover chicken and boil until tender, let cool, then
remove meat from bone.
2 hard cooked eggs
2 cups diced potatoes, boiled but still firm, cooled.
Half stick of butter or margerine
1 cup celery hearts, chopped fine
2 tablespoons sweet pickles, chopped fine
Salt and pepper to taste
1 small onion, chopped fine
1 garlic clove, crushed and chopped fine
1/2 cup mayonaise, or as you like it
In a heavy skillet over medium heat, melt butter, add potatoes and
toss and cook until light brown, let cool.
In a large bowl, mix all ingredients well. Let stand a couple of
hours to incorporate flavors.
