Deep-Fried Wild Turkey
1 Wild Turkey, whole,dressed
2 1/2 gallons peanut oil
1 cup Italian salad dressing
1/2 cup lemon juice, fresh
3 tablespoons onion juice
3 tablespoons garlic juice
2 tablespoons Worcestershire sauce
1 tablespoon liquid smoke
1 1/3 ounces cayenne
1/4 cup salt
1. Mix all ingredients except turkey, pot and peanut oil to make a marinade.
2. Let stand overnight in refrigerator.
3. Use meat injecting needle to inject all through turkey.
4. Put turkey and marinade in a large plastic bag and keep in the refrigerator for 1 to 3 days.
5. Remove in time to bring to room temp before cooking.
6. Heat oil in a 40-60 quart pot to 325 degrees (Use candy thermometer).
7. Immerse turkey completely and cook for 4 minutes per pound.
8. Place a pie tin with holes in the bottom, in the bottom of the deep fryer to prevent sticking.

NEVER attempt to fry a turkey inside.
Unless you have good homeowners insurance.

Spend 30 bucks and buy a turkey frying rig. They're cheap at Home Depot and Lowe's.
Also, this recipe calls for the oil to be 325. Around here we heat to 375 before adding the bird. The temp will drop to around 300-325 when you add the turkey and bring it back up to around 350 slowly.
4 minutes per pound PLUS 5 minutes.
The internal temperature should be around 175-180 in the thickest part of the "inner thigh".
